How Can I Eat More Veggies?
In my household we have contests on who has eaten the most servings of veggies per day. This little competition has helped everyone focus on eating to win; in turn this helps us to insure plenty of fruits and veggies per day. Everyday !
Have a V8 or tomato juice instead of a Diet Coke at 3 pm.
Doctor your veggies to make them delicious: Dribble maple syrup over carrots and roast them, and sprinkle chopped nuts on green beans.
Don’t forget that vegetable soup counts as a vegetable.
Rediscover the sweet potato.
Use pre bagged baby spinach everywhere: as “lettuce” in sandwiches, heated in soups, wilted in hot pasta, and added to salads.
Spend the extra few dollars to buy vegetables that are already washed and cut up.
Make a homemade fresh veggie drink; it can give you a cool 5-7 serving in a 16 oz drink. I make a drink I call TrackMom Special. It really tastes like a fruit drink. You can’t taste the spinach.
- 2 cups fresh baby spinach
- Parsley a handful
- 1 inch of fresh ginger
- 1 apple
- A few chunks(6-7) of can pineapple or 2 rings fresh
- 2 ribs of celery
- 2 sprigs of parsley
- 1-2 cups of water
Chill for 20 minutes and it read to drink. I have this drink at least 4 times a week. Really hate veggies? Relax.
If you love fruits, eat plenty of them; they are just as healthy (especially colorful ones such as oranges, mangoes, and melons).
